Raised by one of three Southeast Kansas family farmers. Swalley Farms in Girard, KS or Mustard Seed Farms in Ark City, KS using regenerative management practices (pigs are raised outside on pasture and rotated onto fresh paddocks regularly.) Or by Mustard Seed Farms of Ark City using local feed and raised in small groups.

The perfect cut for chicken-fried pork cutlets with mashed potatoes and gravy. This is a dad-pleasing family favorite.
