Raised in Girard, KS by Swalley Farms using regenerative management practices. Pigs are raised outside on pasture and rotated onto fresh paddocks regularly.

Lard is the fat from a hog. Once melted down, it is used for frying, adding to lean cuts of meat, and using as a healthy shortening substitute.

"Leaf" lard is the piece of fat that runs along the loin of the hog - it is the most pure form and is sought after for use in baking (especially pie crusts) for it's pure flavor.

"Back" lard is other fat from around the hogs back and belly. It's best for things that benefit from a meaty flavor, like frying or adding to meat.
